  • Knives: This is a great pair, a custom set made for heritage presentation. The Concordia is my most popular large chef's knife, technically a Sabatier French design, with a wide, strong blade and a deep hollow grind with a 12" radius, creating an incredibly thin, yet tough cutting edge. The longevity of this type of grind is superior to all other grinds, remaining incredibly thin for generations. The Concordia has an extended top front bolster, for a comfortable pinch grip that allows dicing and chopping on the board. The curve of the blade is perfect for mincing board work, light or heavy. The spine is thick enough to support use without flexing, and the handle is broad and full in the hand. The Sanchez is extremely popular as well, a narrow, crossover blade capable of fine work, boning, even fillet with a very comfortable and rounded handle. It's a lightweight knife that is extremely stiff and true, with an aggressive point that can work in tight, accurate conditions. The fully tapered tangs help balance the weight of the knives, and the spines of both knives are clean and smooth for easy cleaning and comfort.
    • The steel chosen for these knives is Food Contact Safe 440C high chromium martensitic stainless steel, my most requested steel for a reason. When properly treated, it's a dependable, reliable workhorse of extremely high corrosion resistance, good toughness and high wear resistance. The high chromium of 440C along with the high carbon and moderate molybdenum results in profuse chromium carbides, increasing corrosion resistance as well as wear resistance. To bring this steel to its zenith, I used my proprietary T3 deep cryogenic process in heat treating this blade; it's a highly detailed, extremely sophisticated process that takes 33 individual steps and takes over a week long. The result of this is incredibly wear-resistant blades that have extremely high carbide development, fine grain, and extremely high corrosion resistance. Asperity is reduced; the microstructure development is superior to any other typical handmade knives, and far above any factory or manufactured knives. This is, simply put, 440C at its very finest advanced condition. I've applied a razor-keen single bevel cutting edge to both knives.
    • I bolstered the knives with zero-care 304 high chromium, high nickel stainless steel bolsters, which are contoured, rounded and finished for a comfortable feel. The bolsters are secured with zero-clearance peened pins and dovetailed to bed the handle scales. The front bolsters are sealed and rounded at the faces, the rear bolsters are wide and support the rear quillon that locks the handle into the hand in the Concordia. The rear bolster of the Sanchez is comfortable and rounded in the palm of the hand.
    • The handle scales of this knife are a gemstone chosen by my client, and are Lace Amethyst from Brazil. This is a hard, durable stone, with a long pedigree, cherished since ancient times. I carefully selected bookmatched scales, with a nice pattern that compliments each knife. The Concordia has a straight layering fortification profile and the Sanchez features an attractive curve of the crystal forms. This is a complex gem, with incredible layers and interlocking patterns in violet-purple hue ranging to white and clear. The gem is more beautiful the closer it's examined.
    • The knives feel solid in the hand, with very strong, thin edges, suited to thin and razor-keen cutting, and are both Food Contact Safe.
  • Case: My client requested a case suited to longevity and care, so I created a hand-carved case of stacked leather shoulder, inside covers of leather belly, and an outer cover of top grain leather. I stitched it with Chestnut-colored nylon, and incorporated stainless steel snaps. The entire case is lacquer-sealed for longevity.
  • A beautiful, heritage heirloom pair of tools suited for generations of use and treasure!

Hi Jay!
I am trying to think of a way to describe these two knife sets but words like beautiful or magnificent do not do them justice. I have read many different replies on your site from people that say the pictures do not do them justice and they are sooo right! It seems odd in a way to describe a knife as beautiful but that is exactly what they are. They are truly impressive to hold in my hand and marvel at the beauty of not only the appearance but also the exquisite workmanship you have put into these knives. I cannot  imagine how you manage to make such a seamless transition on the handle from the bolsters to the gemstone. The blades are perfect!  They are unbelievably sharp, and the mirror finish really sets them apart from all other kitchen knives.

The Concordia is really an awesome knife and this is where the pictures cannot relay the true feel and size of the  knife. The extended front bolster on it is perfect. I do not know why all knives are not made using that feature. It really adds to not only the safety in handling the knife but also the control while cutting. But, that is just me. I know a lot of people may not care for that but I would urge all looking for a knife like this to consider it.

The Sanchez is equally awesome and will be the go-to knife for the daily kitchen cutting tasks. The gemstone handle on each of these is really beautiful. The amethyst and lapis lazuli handles are truly one of a kind on knives like this.  

I have already shown both of these sets to people and the first word they all use is beautiful. It is almost deceiving that something so beautiful can be so functional as a working tool for the kitchen. I take some pride also that I know they are personalized by me for my family. They are unique and will never be duplicated!

I wish I could brag about my new knife sets to all of your clients and show them what awesome sets they are but they will have to settle for pictures. I hope they all remember that the real thing in their hand is so much better! Thank you Jay.
