"Sanchez" Custom Collaborative Boning Chef's Knife by Rusty Russom and Jay Fisher
  • Size: Length overall:10.0" (25.4 cm), Blade Length: 5.7" (14.4 cm), Thickness: .1875" (4.76 mm)
  • Blade: 440C High Chromium Martensitic Stainless Tool Steel, Hardened and Tempered to Rockwell C57, Satin Finish
  • Bolsters, Fittings: 304 Stainless Steel
  • Handle: Olive Wood
  • Sheath: Hand stamped leather shoulder
  • Knife: Custom made for a great client, Sanchez is a thin, beautiful kitchen knife designed for delicate work. The tang is fully tapered with proper balance and weight in mind. This knife feels great to hold and provides plenty of strength for the toughest preparation. The Sanchez can cut vegetables and meats with ease and can do paring and skinning chores as well. We gave the Sanchez a deep hollow grind and a razor sharp edge. The handle curves downward to fit tightly in the heel of the hand allowing for more pressure while cutting. The client wanted front bolsters only to reduce the weight of the knife even further, allowing for quicker and more delicate work in the kitchen. The olive wood handle is light colored with beautiful dark figure throughout. Six 3/32" thick pins bed the Olive Wood to the tang for a handle that will last indefinitely. This elegant knife will surprise the user with its durability, stability, toughness and strength in any kitchen preparation job it is used for.
  • Sheath: For the sheath, I made an all-business, border tooled model with 9 - 10oz. leather shoulder, medium brown dyed, hand-stitched with polyester sinew, lacquered and sealed. This is a tough, thick, and sturdy sheath with substantial welts and thickness, and should last for decades with moderate care.

This is an elegant and sleek chef's knife that will be used in many kitchen preparation chores.

Thanks, W. S.!
